Elysian EVOO is produced exclusively from the rare Koutsourelia olive variety, indigenous to the wider Achaea region and documented since the years of Homer. Unlike internationally diffused cultivars, Koutsourelia remains geographically rooted, adapted over millennia to the microclimate, soils, and biodiversity of this specific corner of Greece. Its resilience and expressive character are inseparable from the land itself—an agricultural lineage preserved rather than optimized away.
